High Protein, High Fibre Chocolate Bliss Balls

Prep Time: ~15-20 Mins
These are such a quick, easy, higher protein, higher fibre snack option. They satisfy that sweet tooth, chocolate craving we all know too well.

Ingredients
1.5 Cups Raw unsalted almonds
1 Cup dried dates
2 Tbs Chia Seeds
3 Tbs Cacao Powder
Desiccated Coconut (optional)
Method
Soak dates in 1/2 cup of boiling water and set aside for 5-10 mins
Meanwhile, blitz your nuts in the food processor/ blender until they are well crushed
Add the dates + 2 Tbs of the date water, chia seeds and cacao powder and blitz again. (You might need to scrap down the sides a bit and blend again).
(You also might need a little extra of your date water to get it to come together)
Roll into balls and coat in coconut
Store them in the fridge for up to 7 days or in the freezer for a quick grab n go snack

Variation options:
Use a mix of raw unsalted nuts and seeds (cashews are great and sunflower and pepita seeds are great for a nut free option)
Add an extra 2 Tbs of Flaxseeds for some extra fibre (and phytoestrogens to support your Oestrogen levels)
Replace the Cacao powder with cinnamon and ginger for a spiced version
Roll in sesame seeds or more cacao powder
Add 1/2 Cup of Oats for a higher carb to protein ratio
