Breakfast Loaf

Makes ~12 Serves

Prep Time: 10 mins

Cooking Time: 45-55 mins


Ingredients:

Wet

  • 1 Banana

  • 2 medium carrots (grated)

  • 2 small-medium Zucchini (grated)

  • 1/3 cup Milk of choice

  • 1/3 light olive oil

  • 2 Eggs (or 2 Flax Eggs)

  • 1 tsp vanilla essence

Dry

  • 1 1/2 cup Wholemeal Flour

  • 1/2 cup Oats

  • 1 tsp baking powder

  • 1/2 tsp bicarb soda

  • 2tsp (or more) Cinnamon

  • 1/2 cup chopped walnuts (optional)

  • 1/2 cup desiccated coconut (optional)

  • 1/3 cup pepita and sunflower seeds (optional)

Method:

  1. Preheat oven to 175C (fan forced)

  2. Line a loaf tin with baking paper and set aside

  3. Mash Banana in a bowl

  4. Add carrot, zucchini, milk, oil, eggs and vanilla essence and mix until combined.

  5. Add oats, baking powder, bicarb, flour and cinnamon in and mix until just combined.

  6. Add in any extras you like.

  7. Bake for 45-55mins until centre is cooked through

  8. Leave to rest for 10 mins before transferring onto a cooling wrack.

  9. Enjoy warm, or chop and freeze in portions.
